I have spoken to a few people and they all have told me normalization is a must when editing your podcast. Do you guys agree with this. also could someone tell me what it actually does?

Normalization keeps a more consistent volume level. Depending on what software you are using they may actually have a normalization tool. I think adobe audition calls it "broadcast". The way it is done most of the time is using compression. For example, if I remember correctly Adobe Audition and Adobe Premier use a multi-band compressor for the "broadcast" filter.
