I really dont know much about processing of audio and was hoping that some experts here can help. How do you create the best possible audio file. Bit rate, processing.. things like that. I know that the best way to get really good quality is to record really good audio but I would like to go above and beyond that for my first podcast.

Just record at 44 kHz 16-bit wave. Edit. Compress to 64k to 128k MP3. If possible, use the Frauhofer MP3 codec, the easiest way to do so being to encode your MP3 audio in iTunes or Adobe Audition.

I have been reading that NPR (National Public Radio) runs at 56k or 64k.

It depends on where you're going to upload the file. If you are uploading for a direct download, you have control over your quality. If you upload to SoundCloud, they are going to encode your audio to 128k MP3, regardless of which format you use for your upload. A hard limiter does not decrease the quality of your audio unless you abuse it.
